Mascarpone & Leek Pizza
The fanciest way to make an onion and cheese pizza.

Leeks were not a common vegetable in my house when I was growing up. I don’t think I ever had leeks until I was an adult, but I really like them. They have a nice subtle onion-like taste that works well in many dishes, including pizza.
This was a pretty simple pizza. It started with a standard dough and some garlic olive oil brushed on. Then it was topped with mascarpone cheese and a healthy helping of chopped leeks.
A lot of the pizzas on this blog are pretty weird. If you ever saw them in a real restaurant it’d be a wacky sports bar or something. This pizza, however, could be served at a high-end pizza place. It was super good. I’d love to make it in a wood-fired oven.
