Elote Pizza
Flamin' Hot Cheetos on pizza. Yes.
Last summer, I had an elote pizza from Three Blonds Brewing in South Haven, MI. I’ve wanted to make my own ever since.
I started with the dough and gave it a liberal coating of garlic olive oil. Then it was on to the cheese—mozzarella and queso fresco. Before making the pizza, I grilled some corn. I cut that corn off the cob and sprinkled it over the top of the cheese.
After cooking, I finished it off with a drizzle of chipotle aioli and…Flamin’ Hot Cheetos. This was how Three Blondes did it and I really dug it.
I loved this pizza, it felt very summer-y. Corn is surprisingly good on pizza. The crunch and spice from the Cheetos is very nice, not just a gimmick. If I had cooked the crust a tiny bit better this would have been a perfect 10/10.
