Christmas Fig Pizza

With Pizza Friday falling on Christmas Eve, I obviously had to do something festive. What’s more festive than figs? Well, a lot of things, but let’s just pretend nothing beats figs. Thanks.

Let’s break it down. I started with a classic dough and garlic olive oil. Toppings, in this order: light dusting of mozz, caramelized onions, fig goat cheese, bacon, and dried figs…fa la la….la.

Holy cow, this was a good one. Figs and goat cheese is a great combination. The salty meatiness of the bacon and sweetness from the onions really rounded it out. Plus there’s a couple of different textures. I just kept wanting to go back for more.
